Super chocolatey easter cookie dough desserts with a chocolate mini egg stuffed cookie dough, perfect with ice cream and chocolate sauce to serve!

It’s only a few days away from Easter now, so this is your last Easter bake of 2024… but honestly, I have about 100 easter based recipes now, so I think you’ve got enough to choose from!

The good part about this bake is that it’s super easy to make as a delicious dessert for two. You can multiply it up or down for more, but honestly.. it’s so so so good! 

Easter bakes

This year I posted probably one of the most traditional easter bakes ever, the Simnel Cake, which you all utterly adored. I also posted my mini egg cookie cups as a fun and cute idea for something tasty. I wanted to post another easy recipe, so here you go. 

I have countless of delicious other easter bakes such as my world famous Mini Egg NYC Cookies and my Mini Egg Cheesecake, so you have all the ideas for bakes this easter. I realise, sometimes there are too many options so it’s hard to choose. If you want a showstopper, go for my mini egg drip cake. If you want something quick, go for these easter cookie dough desserts. 

Cookie bakes

This recipe isn’t really new to my blog, because it’s basically identical to my triple chocolate cookie dough desserts recipe. It’s basically identical, as I was hungry for cookie dough one day, used easter chocolates, and thought why not post this version as well so you can all enjoy the glory. 

This, the triple chocolate version and of course the regular cookie dough desserts were originally inspired by the molten cookie dough that you can get from Pizza Hut. I used to adore this when I was younger, but I swiftly realised my version is much nicer and better. 

Cookies are by far my favourite bakes going at the moment, and I just can’t get enough of cookie dough that is straight out of the oven. It’s far too delicious and I am obsessed. 

Cookie dough

The cookie dough itself is so easy to mix together, and as it’s a small amount I usually just mix it in a small bowl with my handheld mixer, or a spatula. 

  • Butter – you can use a fridge cold baking butter, or room temp unsalted butter 
  • Sugar – I use light brown soft sugar, but you can use caster sugar, granulated sugar, or even dark brown soft sugar
  • Egg – one medium egg is perfect for this 
  • Vanilla – optional, but always delicious 
  • Flour – plain flour is important so that it doesn’t balloon like a cake 
  • Cocoa – I use a strong cocoa powder for a super chocolatey taste. If you want a plain bake, replace the cocoa with more flour 
  • Bicarb – helps create the perfect texture to the bake 
  • Chocolates – white chocolate chips for me, but any works. Also, LOTS OF EASTER CHOCOLATES. 

The bakeware

I use some cute creme brûlée dishes in my recipe because it makes the cookie dough look delicious and I have owned this dishes for so many years now. However, I know it’s hard to get a hold of the exact same ones. 

Basically, any crockery based dish that would suit a creme brûlée would work, such as these dishes, or even these dishes. However, some larger ramekins like these will also work perfectly for this bake. 

The dishes I use are about 12-13cm wide, and about 3cm deep, but anything vaguely similar to that (even small foil dishes) would work perfectly!) 

Easter chocolate

When it came to the easter chocolates I used in this bake, there was no rhyme or reason. As always, I buy oodles and oodles of easter chocolates of all different brands, and end up with a mixture of everything. I have cadburys, smarties, milky bar and more so a little bit of everything went into these cookie dough desserts. 

You can of course theme this to a particular easter brand of chocolate if you wanted, or even add a soft centred chocolate to these which would be glorious as they’re designed to be served warm. Honestly, do what you want.

  • You can swap the sugar for granulated sugar, caster sugar or dark brown sugar 
  • You can use any easter chocolates you like 
  • These are best served warm and fresh. 
  • You can easily double the recipe up to serve four!

Easter Cookie Dough Desserts!

Ingredients

  • 60 g unsalted butter
  • 100 g light brown sugar
  • 1 medium egg
  • 1/2 tsp vanilla extract
  • 100 g plain flour
  • 25 g cocoa powder
  • 1/2 tsp bicarbonate of soda
  • 75 g white chocolate chips
  • 100 g easter chocolates

Instructions

  • Preheat the oven to 160ºc fan and grab two larger ramekins or creme brûlée dishes 
  • Mix the butter, and the sugar. 
  • Add the egg and vanilla
  • Add the flour, bicarb, cocoa powder and chocolate chips and easter chocolates and mix well until it comes together to form a lovely thick cookie dough
  • Divide the mixture between the two dishes and bake the cookie dough in the oven for 12-15 minutes
  • Remove from the oven and let it cool for a couple of minutes and then serve with ice cream, chocolate sauce and even more easter chocolate
